Mushroom and Leek Tart

I whipped us this mushroom and leek tart as a quick lunch the other day. You can use the same principles to make pretty much any type of tart you like - but the flavours in this one are sensational.
To begin, take a piece of store-bought puff pastry out of the freezer and leave it on the bench to thaw (about 15 minutes). Meanwhile, place chopped mushrooms and leek in a frying pan with some butter and saute until golden.
Place the puff pastry onto an oiled baking tray, and with a butter knife score a border in the pastry, about 1-2 inches from the edge. Place the filling within this line. At this point I dotted a few pieces of blue cheese on top of the mushrooms and leeks - but a fetta would also work well. Eggwash the edges of the pastry.
Place in the oven for about 15 minutes until the pastry is golden.
