Nigella's crustless pizza

The problem with making your own pizzas is that is does require some planning. You have to wait for the dough to rise and you really want to have a good stock different toppings waiting in your fridge. This is a sort of cheat's version of a pizza, which is perfect for a quick and easy meal. You can put whatever toppings you like, but really, I think the cheese is an absolute! We made ours with chorizo and it was lovely.
Certainly not a traditional pizza base, this is almost like eating a.... well... I don't know... maybe a pancake? Pizza pie? The texture is unexpected, but for it's ease and speed, I will be making this one again.
Nigella's Crustless Pizza
1 egg
100g plain flour
pinch of salt
250ml milk
butter for greasing
100g grated cheddar cheese
50g chorizo, sliced
1. Preheat the oven to 200 degrees C. Beat the egg with the flour, salt and milk to make a smooth batter.
2. Grease a round 20cm overproof pie dish, the stir in half the grated cheese, before pouring it into the dish.
3. Bake for 30 minutes. Take the dish out of the oven, sprinkle with the remaining cheese and add your topping (chorizo). Return to the oven and cook for a further 2-3 minutes until the cheese is nicely melted. Serve.
