No-churn pomegranate ice cream

Looking through a few books to come up with something to serve after our goat curry the other night, I came across this recipe in Nigella Lawson's Nigella Express. It was exactly what I was looking for, something sweet, but light and refreshing. The sweetness and colour reminded me of fairy floss, but really the texture and flavour was more like this recipe here.

However you want to look at it, this pomegranate ice cream was delicious... and I mean was... it's all gone now and all I have is photos and memories. I would highly recommend making this as a dessert if you are making something spicy for a main. As a bonus - it is really easy to make!

No-churn pomegranate ice cream (from Nigella Express)

juice of two pomegranates
juice of one lime
175g icing sugar
500ml thick cream

Place juices and icing sugar into a bowl and mix until the icing sugar is dissolved. Add cream and beat until soft peaks form.

Place in a container with a lid and freeze for at least four hours or overnight. Soften slightly before serving.
