Pancakes

What to do when you feel like a hearty breakfast, but you forgot to buy bread yesterday, and you don't want to be rude to the chickens... but you've kinda done the egg thing a lot lately..... Pancakes!
This pancake recipe is one of my favourites and I find it works best if you leave the batter to rest for a while (even overnight).
1 1/2 cups self-raising flour
1 egg
1 cup milk
1 pinch bicarb soda
1/2 tsp vanilla essence
2 tbs caster sugar
Mix all ingredients together well. Ladel a small amount into a hot, buttered frying pan and cook until bubbles form on the surface, then flip. Continue cooking until soild through. Repeat with remaining batter.
There are lots of options for pancake toppings. I love to use lemon and sugar, or maple syrup and cream, or jam and cream. I've also had them spread with butter and vegemite, which although it sounds a little odd, is actually really good.

I usually so "no icecream, can I have bacon instead". Delicious! With that breakfast, I barely need to eat until the next day.
Of course if you never visit South Australia, you'll never get the chance to drop in for a meal and drink. But if you are ever around The Mallala region, drop in it's definitely worth it.
