Polenta crumbed lamb

Although we are not making a lot of polenta at our house these days, we are getting through our bag of polenta in the cupboard. A variation on polenta crumbed chicken, or polenta crumbed fish fillets, try some polenta crumbed lamb steaks.
To make, simply dust each steak with some wholemeal flour, then run it through an egg wash and finally coat it with some polenta. Heat a little olive oil in a frying pan and pan fry until golden brown and cooked through to your liking (about 3-4 minutes each side).
For a delicious accompaniment, sauté some chopped onion and garlic, then add some chopped mushrooms, stirring until everything begins to colour. Add some chopped roma tomatoes and a handful of sliced basil and cook until warmed through and the tomatoes have begun to collapse. Just before serving, stir through a small amount of crumbled feta cheese. Arrange on a plate with the lamb and garnish with a couple of basil leaves.
