Prosciutto chicken with creamy risoni

Rosemary is a very versatile plant and it is great with roast lamb, and also chicken. Another classic combination is bacon, or prosciutto with chicken, so combining the three has to be a winner.

By wrapping the rosemary against the chicken with the prosciutto you can take an otherwise fairly standard meal of roast chicken and turn it into something a little bit fancy. The rosemary flavour penetrates the chicken and the saltiness of the prosciutto complements the chicken beautifully.

Simply press the rosemary onto the chicken drumstick and tightly wrap the prosciutto around the leg. Heat a little oil in a frying pan and fry the chicken until lightly golden. Then lay the drumsticks onto a baking tray lined with foil and bake in a 180 degree oven for 30-40 minutes until the juices run clear.

Serve with creamy risoni or pasta.
