Quick and Easy Chocolate Cupcakes

The recipe for these tasty treats came from my friend Amber and were served as part of our Hen's Night catering. Please note the pink cup cake cases, as well as the pink hearts. For the record, the hearts tasted a little strange - points go to one of the girls who was there on the night, who upon eating the one atop her cupcake asked a little alarmingly, but innocently "Were we meant to eat them?"
Quick and Easy Cupcakes
1 cup self-raising flour
2-3 tbls cocoa powder
1 cup brown sugar
2 eggs
1/2 cup milk
90g butter, melted
1 tspn vanilla essence
1. Preheat oven to 180 degrees C. Grease 12 muffin molds or a 20cm ring tin.
2. Sift flour and cocoa powder into a bowl. Add remaining ingredients and beat with electric mixer for 3 minutes (this always feels like it takes for ever - but it really will only be 3 minutes!)
3. Pour mixture into prepared tin and bake for about 30 minutes or until cake springs back when lightly pressed. Remove from oven and stand for 5 minutes before turning out onto a wire rack to cool completely. Dust cake heartily with icing sugar before serving or if time allows, cool and coat with chocolate ganache. Pink hearts are an optional.
