Quick Quiche

Tonight I have made myself a quiche for a quick, easy dinner. This is probably the easiest quiche in the world to make, as you don’t have to make the pastry, just use packet pastry mix.
This is a recipe that my mum used to make – and I have no idea where she got it from. You will need, three eggs, half a cup of chopped bacon, half a cup of milk, three-quarters of a cup of grated cheese, three-quarters of a cup of pastry mix and one chopped onion (I use Spanish onion, brown onion is also fine, but I prefer to fry it lightly beforehand).
All you do is place everything in a bowl and then mix until it just come together. Pour into a prepared dish, and I like to top with a few slices of tomato and a sprinkle of paprika. Bake in a moderate oven for 45 minutes and serve with a green salad.
