Salsa Salad

When my beautiful boy decided we must have BBQ lamb on Australia Day, I quickly whipped up this salad to accompany it. Using ingredients from the fridge I finely diced cherry tomatoes, some capsicum, a lebanese cucumber, a little red onion and some olives. Not only did this look specacular, but the combination of fresh flavours, with the crunch of the cucumber and the zing of the onion really complemented the lamb.
