Sausage Rolls

The Hen's Night was a roaring success. We did a lot of baking on Saturday before the event and one of the things we made was sausage rolls. I think that these will go onto my list for easy, tasty cocktail food - people just loved them.
1kg sausage meat (you can buy this as is, or you could buy quality sausages and take the skin off them)
herbs and spices (rosemary, thyme, sage, cloves, pepper, salt)
1 cup breadcrumbs
6 sheets puff pastry thawed
Mix together sausage meat with herbs, spices and breadcrumbs - you'll probably need to use your hands to really mix things through.
Place a sheet of puff pastry onto a bench. Cut pastry is half, then make a 'log' from the sausage meat, about 1-1.5cm in diametre. Place the sausage meat in the middle of the puff pastry and roll the pastry around it, sealing the edge. Continue with remaining meat and pastry.
These can be refrigerated until needed.
When you are ready to bake, brush an egg wash over the pastry so it puffs up nicely and goes golden. If you are serving as finger food, cut into bite size pieces. Bake for 25-30 minutes until golden and cooked through.

I would love to make these now and eat a dozen but I am calorie counting at the moment and taking on the biggest losers.
Once the diet is over this could very well be my first treat - they sound so yummy and I LOVE SAUSAGE ROLLS.
