Sensational Sushi

I still had some sushi rice in the cupboard from the last time we made sushi for a party – so it was deemed time to crack out the sushi mats and get rolling.
I’m not a big fan of raw fish, but I do like the combination of rice, vegetables and smoked salmon or tuna. My favourite trick when making sushi is to combine about a teaspoon of wasabi with a tablespoon of mayonnaise and then stir the mix through the flesh of an avocado. I also like to use julienned carrots and cucumber for a bit of crunch.
Once the sushi is rolled, it is important to cut them, into about six pieces. Don’t think you can cut them into bigger, fewer pieces – this will just result in the rice spilling out everywhere when people bite into them.
Serve with soy sauce, and extra wasabi if desired.
