Simple Pumpkin Soup

As much as I love this pumpkin soup recipe sometimes I love being able to make and eat a delicious soup all within half an hour. The key to this recipe is using good stock - everything else is pretty simple.
Simple cream of pumpkin soup
1 tbs butter
1 large brown onion, coarsely chopped
1.5kg pumpkin, peeled and coarsely chopped
2 large potatoes, peeled and coarsely chopped
5 cups chicken stock
1/2 cup cream
1.Melt butter and saute the onions until softened. Stir in potato and pumpkin chunks.
2. Add stock, bring to the boil and simmer uncovered for about 20 minutes, when the pumpkin is soft.
3. Using a stab mixer or blender, blend your soup until smooth. Return soup to saucepan and add cream. Stir until heated through.
Serve and garnish with parsley or crispy bacon pieces.
