Slow cooker butter chicken

Butter chicken


I know we have talked a lot about slow cookers here, here, here, here and here (just to name a few), but it really is such an easy way to cook, particularly if you know you're going to be busy around dinner time and want something that is ready to go.

This is a slow cooker take on a classic Indian dish, and what I particularly like about this recipe is the fact that it freezes for another easy meal sometime down the track.

Butter Chicken (from the Australian Women's Weekly cookbook Slow Cooking)

Serves 6

12 skinless chicken thigh cutlets,
2 tablespoons lemon juice
1 teaspoon chilli powder
3/4 cup greek yoghurt,
5cm piece fresh ginger grated
2 teaspoons garam masala
45g butter
1 tablespoon vegetable oil
1 medium brown onion, chopped
4 cloves garlic, crushed
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon paprika
2 tablespoons tomato paste
410g canned tomato puree
2/3 cup chicken stock
2 tablespoons honey
1 cinnamon stick
1/3 cup pouring cream
fresh coriander

1. Combine chicken, juice and chilli in a large bowl. Cover, refrigerate for 30 minutes.
2. Stir yoghurt ginger and half the garam masala into the chicken mixture.
3, Heat butter and oil in a large frying pan, cook chicken, in batches, until browned all over. Transfer chicken to slow cooker. Add onion and garlic, rest of garam masala, coriander, cumin and paprika to same frying pan, cooking, stirring, until fragrant. Remove from heat, stir in the tomato paste, puree, stock, honey and cinnamon. Transfer to the slow cook. Cook, covered, on low for 4 hours.
4. Stir in cream and serve with fresh coriander over rice

Suitable to freeze at the end of step three - and highly recommended.

I am not a big fan of the requirement to brown meats before adding to the slow cooker, but it does make a big difference to the flavour. I have seen a commercial for a new slow cooker which has a steel base suitable for sitting on your cooktop for browning. If you are thinking about purchasing a slow cooker, I would certainly recommend looking at this model - this feature would certainly clinch the deal for me!

Hooorah Helen - with it getting colder outdoors I have been busting to bring down the slow cooker for its winter season.

This one scored the winter debut cooking Let u know how I go!

This recipe is missing at least one step. It doesn't tell you what to do with the other half of the garma masala or what to do with the cumin, coriander and paprika!!
