Slowed cooked chicken marengo

Slow cooked chicken just falls off the bone, and this recipe beautifully encompasses all the wonderful things about the slow cooking movement. The flavours combine to create a rich and fragrant sauce, and the herbs and brandy really shine through. My favourite part of this recipe is actually the mushrooms. Next time I make it I will probably double the mushroom quota.
Slow cooked Chicken Marengo (inspired by Slow Cooking Collectors Edition)
1.8kg chicken pieces
salt and pepper
1 tablespoon oil
2 cloves garlic, crushed
1 bouquet garni
3/4 cup water
2 tablespoons brandy
400g crushed tomatoes
12 button mushrooms
2 tablespoons chopped parsley
1. Season the chicken pieces with salt and pepper. Heat the oil in a pan and brown the chicken.
2. Transfer the chicken to a slow cooker set on low and add garlic, bouquet garni, hot water, brandy, tomatoes and mushrooms. Cover and cook for 6 hours.
3. Serve with chopped parsley and steamed rice.
