Spiced Beef Salad

It is well and truly summer - and with another official heatwave, and three days of 41 degree heat forecast here in SA, it is time for salads, sushi and cold rolls.
For a bit of interest, this marinade is a great way to tenderise your meat, as well as doubling as a low fat dressing. I included lettuce leaves, tomato, red onion, cucumber and some goat's cheese in the salad, but you could use anything you had on hand. For something a bit different, you could try the meat and marinade as part of a stir fry, or just with some noodles.
Spiced Beef Salad (serves 2-3)
200g beef strips
1 medium orange, juiced
1/2 lemon, zest and juice
1 lime, zest and juice
1 tablespoon tequila
1/2 tablespoon ground cumin
1 garlic clove, crushed
1 tablespoon soy sauce
1 tablespoon sweet chilli sauce
Mix all ingredients together and marinate for two hours, or overnight. Drain most of the excess marinade, reserved approximately 2 tablespoons.
Heat a little oil in a frying pan and cook beef strips until browned. Add the reserved marinade to heat through.
Mix beef strips with salad and serve while warm.

Did u go ok with all the fires?
I had dins at a friends place tonight and she did a very similar marinade on a pork fillet which we BBQ'd. It was sensational - I just wished I took pics so could write it up.

No fires in our neck of the woods (fingers crossed) - just ridiculous heat!
Sounds great on pork as an alternative, would also be good for chicken I am sure!
