Spicy Pork Noodles

This is a favourite go-to dish for those days when I've left it a bit late to make dinner and I'm looking for something really easy. This recipe is taken from Jill Dupleix's Totally Simple Food.
1 tbsp brown bean or chilli bean sauce
1 tbsp hoisin sauce
2 tbsp soy sauce
125ml water
1 tsp soft brown sugar
1/2 cucumber
2 tbsp peanut oil
4 spring onions, finely chopped
500g minced pork
1 tbsp cornflour
1tbsp water or Chinese rice wine
500g hokkien noodles
Mix the brown bean sauce, hoisin, soy, water and sugar together in a bowl. Set aside.
Peel the cucmber and pare lengthwise with a vegetable peeler into ribbons. Set aside.
Heat the wok or frying pan. Add the oil and stir-fry most of the spring onions for 30 seconds. Add the pork and stir-fry for about 5 minutes until the water has evaporated, the oil rises to the surface, and the pork smells sweet and spicy. Mix the cornflour with the water or rice wine and add to the meat stirring.
Place the noodles in a large heatproof bowl and cover with a kettleful of boiling water. Drain well and return to the bowl. Add the spicy pork sauce and toss well. Divide between four warmed bowls, scatter with cucumber and spring onions. Serve.
