Sweet potato mash with mango chutney
September 23rd 2011 07:55
This recipe came recommended from two separate, and very reliable, sources - so I knew I had to give it a go!
Adapted from Jamie Oliver's 30 minute meals, this sweet potato mash is made very special by the addition of store-bought mango chutney.
...and while on the subject of Jamie's 30 minute meals, has anyone out there tried to make these in 30 minutes? From my (limited) experience, I would say it's only possible if you have someone who has already chopped everything up for, and if you run around like an idiot (like Jamie does on his shows).
Anyhow... this is really easy to make, and it is very quick. I served this mash with baked chicken thighs and a side of steamed green beans. Jamie serves it with fish, pancetta, asparagus, broccoli, lemon ginger drink and berry ice cream.
Sweet potato mash with mango chutney - serves 2
300g sweet potato, scrubbed and ends cut off
small handful parsley
1 tablespoon mango chutney
1 tablespoon lime juice
Place sweet potatoes in a large bowl and put in the microwave for 10 minutes, until cooked through and soft.
Put all ingredients onto a wooden chopping board, and chop everything up together (including sweet potato skin). Make sure sweet potato is mashed up nicely and serve.
