Even during the depths of winter, every now and again you want to feast on a really hearty salad. A thai-style beef salad, with winter lettuce and just a hint of chilli, will warm you from the inside, as well as helping to keep your tummy trim in anticipation for the warmer season.
Thai style beef salad (serves 2)
400g rump steak
winter lettuce leaves and baby spinach leaves
red capsicum, cut into strips
red onion or spring onions finely sliced
1 lebanese cucumber, sliced on an angle
coriander and mint
Dressing
1 tablespoon lime juice
1 teaspoon fish sauce
1 teaspoon soy sauce
1/2 garlic clove, crushed
1/2 red chilli, finely chopped
Heat a grill pan and cook steak for 3-4 minutes each side, or until cooked to your liking. Place steak in a warm place and leave to rest for 5 minutes.
Mix together all ingredients for dressing and place salad ingredients into a large bowl. Slice meat across the grain into thin strips and add to salad. Pour dressing over the top and toss gently.
