Toad in the Hole

What is it with traditional english meals that means they have to have funny names. Spotted dick, faggots, bubble and squeak - and when my husband suggested we make Toad in the Hole, I have to confess, I wasn't even really sure what it was. After a little internet searching, we found some ingredients, adding a few of our own, and had a surprisingly delicious supper. I particularly liked the batter, my husband particularly liked the sausages.
Toad in the Hole
2 eggs, lightly whisked
1 cup milk
1 cup SR flour
rosemary
thick sausages
Place two tablespoons of olive oil into the bottom of a baking pan. Place in a pre-heated 200 C oven for 5-10 minutes until hot.
Combine eggs and milk, then gradually add flour, beating until combined and smoothSprinkle rosemary into mixture and stir again.
Take baking tray out of oven and place sausages into tray, bake for approximately 15 minutes, turning half-way through.
Pour egg and milk mixture over the top of sausages and bake for another 25-30 minutes until the batter has puffed up and the sausages are cooked.
