Vodka Pasta Sauce

I came across the inspiration for this recipe on the net a little while ago and I was intrigued. Vodka pasta sauce - it sounded good - and after finally getting around to cooking it, it tasted good. The subtle flavour of the vodka is very delicate, and you can really only taste it if you try, having said that, without it, you'd know you were missing something.
There are several different ways you can make this, but the basic ingredients for the sauce are 1/4 cup vodka, 1/2 cup cream and 1 can of diced tomatoes. Here's my version.
Vodka Pasta Sauce - serves 3-4
1 tablespoon olive oil
1 onion, finely chopped
1 garlic clove, finely chopped
approx 3 cups chopped vegetables - I used broccoli, capsicum and mushrooms
400g tinned tomatoes
1/4 vodka
1/2 cup heavy cream
Saute onion and garlic in the oil. Once starting to become translucent, add the other vegetables and cook for approximately 5 minutes, until lightly browned. Add tinned tomatoes and vodka to ensure everything mixes in well. Bring to the boil and reduce heat. Add cream and heat gently until pasta is cooked.
Serve over small pasta such as penne or fusilli.
You could also simplify this sauce to the cream, vodka and tomatoes and serve over prawns or scallops. It would also be pretty tasty as part of a creamy stuffed chicken breast dish.
