Webber chocolate cake

It all started with the idea to have a few people round for a barbecue. Then we realised we were low on gas, so instead we decided to crank up the webber. But then, we became distracted and when we went back to the webber we discovered that only one side of the heat beats had lit properly. So we lit them again, but by this stage we were pretty hungry. We waited an hour or so, but still without adequate heat in the webber we gave up and cooked out sausages on the stove.
However, not wanting to waste the effort of lighting the webber, I had a flick through the webber book and found this little recipe which turned out to be a huge hit. It was deliciously moist and quite dense. If you don't have a webber, try putting this one in a moderate oven for about an hour.
Chocolate Slab Cake from The Complete Australian Barbecue Kettle Cookbook
(low-fire, indirect, 30-40 minutes, with lid on)
1 cup cocoa
1 1/2 cups hot water
3 cups self-raising flour
250g soft butter
1 1/2 cups caster sugar
4 large eggs
Place the cocoa in the hot water and mix it well. Set is aside to cool slightly. Place all ingredients into a food processor and beat until smooth. Pour the mixture into a buttered large roasting pan. Cook it on the barbecue with the lid on for 30-40 minutes. The cake is cooked when it begins to shrink from the edges and is springy to touch.
This does make quite a lot, but it's great when you have a group of people around!
