Zucchini Slice

I think everyone has their favourite zucchini slice recipe. This one is from my mum, and I am pretty sure it was passed on to her from their neighbour. Either way, it is my favourite, as evidenced by the spots of ingredients and oil smudges on the page in my home-made recipe book. The zucchinis for this recipe were kindly given to me by the brother-in-law.

Zucchini Slice

375g zucchini
1 large onion
3 rashers bacon
1 cup grated cheese
1 cup self-raising flour
1/2 cup oil
5 eggs
salt and pepper

Trim end from zucchini and grate coasley. Chop onion coarsley. Remove rind from bacon and chop coarsley. In a bowl, mix together all ingredients. Pour into a baking pan and cook in a moderate oven for abour 40 minutes, or until cooked through. Serve with green salad.

I will pass this one onto my mum to try - she has her own recipe but loves trying things new. Not a Z fan myself.

Thanks for stopping by Jason - hope your mum likes the recipie - you can hardly even taste the zucchini in it.....

Also, FYI, I've tried a couple of different cleaning tips for my Le Creuset without much success.
I think it might just keep that 'I've been used a lot and I'm loved' look - sort of like a ratty teddy bear!

I might have to give it a shot myself then - always up for something new.

As for the Le Creuset there has to be a way. Have you tried that CLR stuff - it's massive industrial cleaner used for floors but it gets things out of cement. You could try that one - I think you buy it at Bunnings - if it did work it would require a major clean afterwards to get out the chemicals.

Once I burnt a pot so bad I ended up leaving it in the sink for days. I ran all hot water through it when doing dishes or whatever in the sink and dropped detergent into it when not using the sink and just let it soak for days and days. I think then mum told me to boil with salted water and then scrub the crap out of it with steel wool and voila - it now sparkles.

This zucchini slice recipe sounds good - there's a lot of cheese though and a lot of eggs - how much does this recipe make? There's only three in our family, and I don't eat much!

Hi Carolyn,

The recipe I use will serve six when accompanied by salad. If you do find that you have too much - this freezes really well. Good luck with hubby - you can hardly taste the zucchini!
